New York Style Crumb Cake

The recipe comes from my friend, Diane. It is an authentic New York style Crumb Cake. The key to getting the crumbs the way they do in NY bakeries is to melt the butter. It makes a big pan, so you can cut it in half if you desire.
Ingredients:

Topping:

5 cups flour
2 cups light brown sugar
1Tablespoon plus 1-1/2 teaspoon cinnamon
1 pound butter, melted

Cake:

3 cups flour
1 cup sugar
1 Tablespoon plus 1-1/2 teaspoon baking powder
1/2 teaspoon salt
2 eggs
1 and 1/4 cups milk
1/4 cup canola or vegetable oil
1 Tablespoon plus 2 teaspoons vanilla extract

Instructions:

Combine flour, brown, sugar and cinnamon in a bowl.
Stir in butter and set aside.

Cake:

Heat oven to 325º.
Grease and lightly flour a 12 inch by 17 inch by 1 inch cookie sheet.

Stir the flour, sugar, baking powder and salt together in a large bowl.
In another bowl, mix the eggs w with the milk, oil & vanilla.
Whisk until blended.
Add the egg mixture mixture to the dry flour mixture and mix until moist and blended - do not overmix.
Spread the batter evenly in the cookie sheet.
It will look sparse.
Sprinkle the crumb topping evenly over the batter and press down lightly.

Bake 35-40 minutes until the cake rises and the topping bakes into the dough.
Remove from oven and cool before cutting.
