5 cups flour
2 cups light brown sugar
1Tablespoon plus 1-1/2 teaspoon cinnamon
1 pound butter, melted
3 cups flour
1 cup sugar
1 Tablespoon plus 1-1/2 teaspoon baking powder
1/2 teaspoon salt
1 and 1/4 cups milk
1/4 cup canola or vegetable oil
1 Tablespoon plus 2 teaspoons vanilla extract
Combine flour, brown, sugar and cinnamon in a bowl.
Stir in butter and set aside.
Heat oven to 325º.
Grease and lightly flour a 12 inch by 17 inch by 1 inch cookie sheet.
Stir the flour, sugar, baking powder and salt together in a large bowl.
In another bowl, mix the eggs w with the milk, oil & vanilla.
Whisk until blended.
Add the egg mixture mixture to the dry flour mixture and mix until moist and blended - do not overmix.
Spread the batter evenly in the cookie sheet.
It will look sparse.
Sprinkle the crumb topping evenly over the batter and press down lightly.
Bake 35-40 minutes until the cake rises and the topping bakes into the dough.
Remove from oven and cool before cutting.
