This light, refreshing gelatin salad used to be one of our summertime favorites! I found it in a 1997 issue of Taste of Home, where the submitter said, "Fluffy Lemonade Gelatin is a cool, tart side dish or dessert that has a refreshing tang. "I first tasted this light salad at a family reunion, and it went so well with the other foods on that summer buffet." -LuAnn
Makes: TWO 13x9-inch pan
5 (3-ounce) packages lemon gelatin dessert mix (Jell-O)
6 cups boiling water
1 (12-ounce) can frozen lemonade concentrate
1 (12-ounce) container frozen whipped topping (Cool Whip), thawed
In a large bowl, dissolve the gelatin in boiling water.
Stir in the lemonade until dissolved.
Refrigerate until partially set, about 2 hours.
Whisk in whipped topping until well mixed.
Pour into TWO 13-in. x 9-in. dishes.
Refrigerate until firm.
