Chicken, cooked and chopped
Seedless grapes, cut into quarters and patted dry (I used black seedless)
1 cup mayonnaise
2 teaspoons dried tarragon
2 teaspoons Dijon mustard
1/2 cup pineapple juice
1 teaspoon garlic, finely chopped
Pinch of sugar
Mix the binder ingredients together.
Unless you are making a large batch of chicken salad, you might want to cut the binder recipe in half.
I usually cut a recipe down the first time anyway, to see if I will like it before I make a large amount.
The binder is actually the dipping sauce for a chicken Spiedies recipe, so it is a little thin and needs to be blended with more mayonnaise to make it thicker to use in this chicken salad.
I also added a little more sugar.
Suit your own taste.
Mix some binder (with added mayo for thickness) with filling ingredients, enough to coat well, and serve on toasted sub rolls or buttery croissant rolls.
