2 1/2 cups grated zucchini
1 egg, beaten
2 Tablespoons butter, melted
1 cup bread crumbs
1/4 cup minced onion
2 teaspoons Old Bay Seasoning
1/4 cup all-purpose flour
1/2 cup vegetable oil for frying
Thoroughly squeeze out water from grated zucchini and then squeeze with paper towels to get as dry as possible.
In a large bowl, combine zucchini, egg, and butter or margarine.
Stir in bread crumbs, minced onion, and seasoning.
Shape mixture into patties.
Dredge in flour (or crumbs, see Parting Shots below).
In a medium skillet, heat oil over medium high heat until hot.
Fry patties in oil until golden brown on both sides.
Makes 4-6 patties.
I like to use 1 part oil and 1 part butter for frying, as the butter gives them a flavor more like crab cakes.
