Taste of Home Nov. 2011 Our dinner party was held Nov. 5th 2011 so I thought a "Halloween" drink would still be fun to have. Prep time: 20 minutes Yield: 6 servings
1 cup sugar
1 cup water
8 medium kiwifruit, peeled and quartered
1/2 cup fresh mint leaves
Green food coloring, optional
1 cup vodka, optional
1 liter ginger ale, chilled
In a small saucepan, bring sugar and water to a boil.
Cook and stir until sugar is dissolved; set aside to cool.
Place the kiwi, mint and sugar syrup in a blender, cover and process until blended.
Tint green if desired. Pour into a large pitcher, stir in vodka, if desired.
Refrigerate until chilled
Just before serving, stir in ginger ale. Serve over ice.
I usually peel kiwi with a knife, but I found my vegetable peeler did a good job after I cut off the top and bottom of the fruit. I did not add food coloring. One member of the group can't have vodka so we saved out a glass for her before adding the vodka for the rest of us, topping her glass with the ginger ale (careful it does fizz up!) We had ice tea glasses that hold about a cup of liquid. We used 5 ice cubes in each glass. It looks weird with the black seeds floating in the drink but tasted good. I think kids would like the non vodka version.
