1 pound green candied pineapple
1 pound red candied cherries
1 cup chopped dates
4-5 cups chopped pecans
1 cup sugar
4 eggs, beaten
2 cups flour
2 teaspoon baking powder
Grease two (8") loaf pans with shortening.
Line the pans with brown paper (such as a brown paper grocery store bag cut to fit) or parchment paper, then grease the paper.
In a large bowl, mix sugar, flour, and baking powder together, then mix in the eggs.
Add fruit and pecans.
Mix together well.
There won't be a lot of batter, just enough to hold it together, so it is easier to mix using your hands.
Pack batter into pans.
Bake at 250 degrees for 1 1/2 to 2 hours or until a toothpick inserted comes out clean.
Makes 2 loaf cakes.
