Enhanced eggs Benedict
2 large thin slices ham, grilled (I just heat in a heavy skillet)
2 Holland rusks (I use a split toasted English muffin)
1/4 cup Marchand de Vin Sauce (recipe follows)
2 slices tomato, grilled (I just heat in a heavy skillet)
2 eggs, soft poached
1/2 cup Hollandaise Sauce
Lay a large slice of ham across each rusk and cover with Marchand de Vin Sauce.
Add a slice of tomato and then the egg.
Top with Hollandaise and sprinkl with paprika. 1 serving
