Broiled Stuffed Pepper Wedges
1/2 cup chive& Onion cream cheese (I mixed my own)
1 tablespoons chopped black olives
2 medium bell peppers( any color)
1/4 cup shredded cheddar cheese
Cut each pepper into 8 wedges.
Combine the cream cheese and olives. Spread each wedge with 2 teaspoons of the cheese mixture.
Top with shredded cheese.
Place on a foil lined pan and broil till the cheese melts and is slightly browned~
Serve warm or cold~
* Can be made up in advance, covered and chilled till ready to use
* Some other flavored cream cheese would be nice as well
* Add some chopped bacon or sun-dried tomatoes for some texture and added flavor
(I left the Cheddar cheese off. I used a bag of the small red, yellow, and orange peppers and cut them in half. )Bettie in AK
