2 mushrooms per person
1 6 ounce can tomato paste
1 clove garlic chopped very fine.
salt and pepper
1 teaspoon Italian Season (I use Penzey’s)
1 ounce Mozzarella cheese per pizza (I use fresh)
Toppings of choice (I use onion, bell pepper, black olives, and tomatoes)
Heat oven to 350º
For sauce mix tomato paste, 1/2 can water, garlic, salt, pepper, and Italian seasoning.
Take the gills and stem out of the mushrooms. Bake stem side down on a cookie sheet or pizza pan for 5 minutes, turn over and bake for another 5 minutes.
Spoon about 1 tablespoon sauce on each mushroom, add toppings. Bake for 15 minutes. Add cheese and bake until melted.
