My friend made this 5 years ago for DH's birthday because she knows he loves blueberry pie. We both thought it was the best blueberry pie we'd ever had. Over the years, I have gotten so I don't like many desserts as they seem too sweet for me. I guess I liked this so much because it is from fresh berries and not canned ones that have so much sugar in the glaze/sauce, This is made very similar to a strawberry pie I make. I just had never thought of doing it with blueberries. My DH often skips dessert, and usually has a tiny sliver of something if he DOES eat it, but because Blueberry Pie is his favorite pie, he tried it. He went back for seconds! So today, I made it for his birthday again.
One pie crust
1 cup fresh blueberries
1 cup sugar
3 Tablespoon cornstarch
1 cup water
a squirt of lemon juice (about the juice of 1/2 lemon)
1 Tablespoon butter and 3 cups fresh blueberries. Pour mixture into shell.
Prepare pie crust and bake.
Cool while preparing the filling.
Cook blueberries, sugar, cornstarch, water and lemon juicer until the sauce is thick and shiny.
Cool to lukewarm.
While still warm, add butter and blueberries.
Top with whipped cream or vanilla ice cream to serve.
