Citrus Honey Carrots
From MrFood.com Sometimes the simplest things are the bes, like carrots glazed with honey. Why not make our Citrus Honey Carrots and add a twist of lime zest for a nice touch of holiday green? Serves 4 Cooking Time: 5 minutes
2 tablespoons butter
1/4th Cup Honey
2 (14.5 ounce) cans whole baby carrots, drained
1 teaspoon grated lime peel
Melt butter in a large skillet over medium high heat.
Add honey, and cook 1to 2 minutes, or until sauce has thickened, stirring frequently.
Add carrots and lime peel, and saute 1 to 2 minutes, or until heated through and well coated with sauce.
Note: For extra zest, grate a bit of additional lime peel over the top just before serving.
I used about 2/3rds of a 2 pound bag of baby carrots. I used the microwave to soften them for about 4 1/2 minutes.....1/3rd of the bag at a time. (my microwave containers weren't large enough for all that I wanted). I then let them sit in a bowl until it was time to do the last bit of cooking. They were tender crisp and quite good. With all the food we had I figured just 5 or so carrots each. We had some left for today as DH doesn't eat cooked carrots! They were quite good. I think I would have liked the extra zest on top and would do that next time. I didn't use the cans as I thought they might be too soft or perhaps have salt added?
