1/4 cup water
1 teaspoon cornstarch
2 Tablespoons soy sauce
2 teaspoons distilled white vinegar
1 1/2 teaspoon black bean sauce
1 teaspoon sesame oil
1 teaspoon grated fresh ginger
1 clove garlic, chopped
1 pound green beans, trimmed and cut in half
1/2 sweet red or yellow pepper, thinly sliced
* about 1 cup julienned fresh bamboo shoots, optional
Combine water and cornstarch in 2 quart microwave casserole.
Add soy, vinegar, black bean sauce, sesame oil, grated ginger and garlic.
Microwave at 100% power 3 minutes, stirring after 1 1/2 minutes.
Add beans and red or yellow pepper.
Cover with microwave-safe plastic wrap, vent at one corner.
Microwave at 100% power 12 minutes or until beans are crisp-tender; stir after 6 minutes.
Let stand 5 minutes.
