6 medium potatoes
6 slices bacon
3/4 Cup chopped onion
2 Tablespoons flour
1 – 2 Tablespoons sugar (as desired)
1 1/2 teaspoon salt
1/2 teaspoon celery seed
3/4 Cup water
1/2 Cup cider vinegar
Boil potatoes in skins until tender.
Peel and slice thinly into bowl.
Fry bacon, until crisp.
Cook onion in bacon fat (1/3 cup) until yellow.
Stir in gradually flour, sugar, salt, celery seed and pepper.
Stir in gradually water and vinegar.
Cook, stirring until mixture boils.
Boil 1 minute, pour over potatoes.
Add crisp bacon, broken into pieces, mixing gently (Save some for garnishing).
Cover and let stand until ready to serve.
Heat over hot water (only if you let sit until it cools).
Serve garnished with pieces of crisp bacon.
