2 1/2 cups flour
3 Tblsp sugar
1 tsp salt [yes]
1 cup shortening [I used butter instead]
1/4 cup ice water.
6-8 cups sliced peaches (if frozen, thawed) [I used 2 quarts home-canned, drained]
1/4 cup lemon juice
3/4 cup orange juice
1/2 cup (1 stick) butter
2 cups sugar [I only used 1 1/2 cups since peaches were in light syrup]
1 teaspoon cinnamon
1/4 teaspoon nutmeg
1 Tblsp cornstarch [may need 2 Tablespoons]
Extra 1 Tablespoon sugar
[I used my food processor instead of the traditional hand mixing]
Put flour, sugar and salt into food processor.
Add butter and mix until crumbly.
Whip egg and water together, then slowly add through addition tube.
Form dough and chill 30 minutes.
Roll out half of dough and place in 13”x 9” baking dish, over bottom and up the sides.
Bake 20 minutes.
Combine peaches, lemon juice, orange juice and butter in a saucepan.
In a bowl, combine sugar, cinnamon, nutmeg and cornstarch.
Heat peaches with liquids and butter until butter melts.
Stir in dry ingredients.
Remove from heat.
Pour filling into crust and cover with remaining dough cut into strips. [I arranged them like a lattice but without weaving them together.]
Sprinkle with 1 Tblsp sugar.
Bake at 350° for 35 - 40 minutes
