1 pound stew meat, trimmed of fat and cut in bite-sized pieces
1/4 cup dry red wine
1 package Lipton dry onion soup mix
1 can cream of mushroom soup
1 cup Coca Cola Classic soft drink (not diet)
chopped onion (1/2 a large onion)
diagonally cut celery (about 2 large ribs)
baby carrots (or 5-6 large carrots, peeled and cut into hunks)
2 cups egg noodles, cooked and drained OR 1 1/2 cups cooked rice OR 2 cups mashed potatoes (optional)
Place celery, carrots and onions in bottom of crock pot.
Sauté stew meat in a large skillet in a little canola oil until it is lightly browned on all sides.
Remove meat and place on top of veggies in the crock pot.
After removing the meat, deglaze the skillet with the wine.
Then mix the soups and coke into the wine in the pan.
Heat until hot throughout and pour soup mixture over meat and veggies in the crock pot.
Cook on high for one hour, then on low for 4 hours.
Serve with rice or over noodles or mashed potatoes, if desired.
If you work, you could put it on low and cook it all day.
