4-6 cups water ( I used 6 cups)
2 or 3 peeled and sliced carrots
3 stalks celery washed and sliced
one medium onion chopped
2 green onions, white and green parts sliced
1/2 teaspoon cumin
1/2 teaspoon paprika
1/2 teaspoon chili powder
12 ounce package of andouille or other hot sausage, 2-4 links depending on the size of them, you can add more meat if desired
2-3 cups cooked rice
1 can black beans, drained and rinsed
1 can red kidney beans, drained and rinsed
In large pot, bring water, carrots, celery, onion and green onion to a boil and simmer until almost tender.
Meanwhile remove sausage from casing, cut into bite size pieces and in a separate skillet, brown the meat. Then add to simmering veggies.
Add seasonings and rice. Also add drained and rinsed beans.
Heat just to get veggies tender but not mushy and then serve.
