Chocolate Chip Cookie Dough Ice Cream Pie

Since several of us in my family LOVE chocolate chip cookie dough, I DOUBLED the ingredients for the chocolate chip cookie dough layer in this yummy ice cream pie. (The amounts shown in my :rectnt version below have already been doubled). The original recipe also suggested chocolate mint ice cream, but I continued the "cookie dough" theme by using chocolate chip cookie dough ice cream. For the finishing touch, rather than drizzling pieces with hot fudge sauce (which would also be good!), I topped slices with a dollop of whipped cream and half a chocolate chip cookie! -LuAnn

Makes 8 servings


1 store bought Oreo/chocolate pie crust

Cookie Dough Layer:
1/2 cup butter or margarine
1/4 cup sugar
1/2 cup brown sugar
2 Tablespoons milk
1/2 teaspoon vanilla extract
1 cup flour
1/2 teaspoon salt
1/2 cup mini (or regular) chocolate chips

Ice Cream Layer:
3 cups softened chocolate chip cookie dough ice cream

Whipped Cream
4 chocolate chip cookies


To make the cookie dough layer:
In an electric mixer, cream the butter, sugar, brown sugar.
Beat in the milk and vanilla.
Gradually mix in flour and salt.
Stir in chocolate chips.
Form dough into a flat round disk.
Place between two sheets of wax paper, then roll into a circle, large enough to cover the bottom of the pie crust.
Remove the top sheet of wax paper.
Invert cookie dough round over pie crust, then peel off the top sheet of wax paper.
Press the round firmly into the crust.

To make the ice cream layer:
Drop softened tablespoonfuls of ice cream over the cookie dough, then spread the ice cream into an even layer, smoothing the top with the back of the spoon.
Cover pie with plastic wrap.
Freeze for 2 hours, or until firm.

To serve:
Set pie out at room temperature for 10 minutes to soften slightly.
Cut into 8 wedges.
Top each wedge with a dollop of whipped cream and half a chocolate chip cookie.
