1 Tablespoon butter
1 large onion, diced
1 teaspoon Roasted Garlic
1 15 ounce can black beans, drained, rinsed and mashed
2 teaspoons Mole Poblano Rub
4 flour tortillas
1 cup grated cheese, any kind
1 large tomato, diced
Melt butter in large frying pan.
Add diced onion and cook over medium high heat for five minutes.
Stir in Roasted Garlic, beans, and Mole Poblano Rub.
Cook three to five minutes until hot.
Remove from heat.
Place one quarter of bean mixture in the center of each tortilla.
Top with cheese and diced tomato.
Roll up and serve.
Serve with Guacamole and your favorite salsa.
