2 teaspoons vegetable oil
1 large onion, chopped
1 teaspoon Minced Garlic
1 each of red and green pepper, diced
1 Tablespoon Cuban Seasoning
1 teaspoon Fajita Seasoning
1 19 ounce can diced tomatoes, including juice
1 19 ounce can kidney, pinto or black beans, drained and rinsed
2 cups cooked white or brown rice
Sea Salt and Black Pepper, to taste
2/3 cup grated Cheddar Cheese
Combine first 6 ingredients in large saucepan over medium heat.
Cook for five minutes, stirring frequently.
Add tomatoes, beans and rice.
Bring to a boil, reduce heat and simmer for about 20 minutes, or until most of the liquid has evaporated.
Season to taste with Sea Salt and pepper.
Serve with Cheddar Cheese.
