1/2 cup pumpkin puree
1/2 cup cottage cheese (instead of 1 frozen banana)
1 cup almond milk (optional soy, lite coconut or skim milk)
1 tablespoon pure maple syrup, more or less to taste
1/4 teaspoon vanilla
1/4 teaspoon ground cinnamon
1/8 teaspoon ground nutmeg
1/8 teaspoon ground allspice
1/2 cup ice
Puree all ingredients in a blender until smooth.
My pumpkin puree was frozen, and I didn't have a frozen banana, so I substituted cottage cheese for it. The banana is in there to make it creamy, not for flavor, so the cottage cheese worked just fine. Plain yogurt would work, also.
