Large head of romaine, cut in small pieces
1 (15-ounce) can black beans, rinsed and drained
1 large orange bell pepper, diced
1 pint cherry tomatoes, quartered
2 cups fresh or frozen (thawed) sweet corn kernels
5 green onions, sliced
1/2 cup sliced black olives
1 cup loosely packed cilantro, stems removed and roughly chopped
1/2 large avocado (or 1 small avocado)
2 Tablespoons fresh lime juice (about 1/2 lime)
2 garlic cloves
2 tablespoons cup olive oil + water to make 1/4 cup
1 tablespoon red wine vinegar
1/4 teaspoon salt
1/4 teaspoon adobo seasoning
1/2 teaspoon cumin
To make the salad: Combine all of the ingredients in a large salad bowl.
To make the dressing: Combine all of the dressing ingredients in a blender; blend until smooth.
Pour the dressing over the salad; toss until well mixed.
