2 2/3 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon salt
1 teaspoon cinnamon
¼ teaspoon ground nutmeg
2 cups packed brown sugar
1 cup (two sticks) unsalted butter, at room temperature
1 tablespoon vanilla extract
2 tablespoons granulated sugar
2 teaspoons cinnamon
Beat the butter and brown sugar together until light and fluffy.
Beat in the eggs one at a time followed by the vanilla.
Combine the dry ingredients (not including those for the topping) and slowly stir them into the wet ingredients.
Lightly spray (I use Crisco shortening) a 9 inch by 13 inch pan and spread the batter out evenly in the pan.
Mix together the white sugar and cinnamon for the topping and sprinkle the mixture over the batter.
Bake at 350 degrees for 20-25 minutes or until the top feels firm and springy to the touch.
Let cool for at least 30 minutes before trying to cut them.
