1/2 pound yellow squash, sliced (you may also use zucchini or a combination of both)
1/2 onion, chopped
1/4 cup mayonnaise
1 egg, beaten (you will use 1/2 of it)
4 Ritz crackers, crushed
1/4 package dry Hidden Valley Buttermilk Dressing Mix (a scant teaspoon)
1/8 teaspoon salt
1/4 cup grated sharp cheese
1/2 cup crushed Ritz crackers mixed with bread crumbs mixed with 2 tablespoons melted butter (for topping)
Cook squash and onions in saucepan with a little water until tender.
Add all other ingredients except the 1/2 cup crushed Ritz crackers and butter.
Spread into an 8x8-inch greased casserole.
Top with ritz crackers mixed with melted butter.
Bake at 325 degrees for 20-30 minutes or until crumbs begin to brown a little.
