1/4 cup butter
1/2 cup diced onions
1- 2 teaspoons dried basil
1 tablespoon tomato paste
1 (28 ounce) can fire roasted diced tomatoes
1 (28 ounce) can fire roasted crushed tomatoes
1 (14.5 ounce) can chicken broth
20 fresh basil leaves, cut into thin strips
1 cup heavy cream
Melt the butter in a large pot and add the onions.
Cook the onions until translucent and add the dried basil and tomato paste.
Continue cooking while stirring the mixture for a couple of minutes to mix in the tomato paste.
Add the canned tomatoes (both the diced and crushed) and the chicken broth.
Turn up the heat and bring to a boil Ė reduce to a simmer and add the cream and basil.
If you want to puree the tomatoes, do that before adding the cream and basil. Return to heat
