Peppadew Romesco Dip
This was a dinner group recipe I made last night. Not sure where it came from. It's description is:
Subtly sweet and slightly spicy, this may become your favorite new dip, sauce, and condiment.
Everyone requested the recipe after dinner!
1 Jar (14 oz) mild sweet picante peppers, (such as Peppadews), drained
1/4 cup extra-virgin olive oil
1/4 cup slivered almonds
1/4 cup shredded Manchego cheese
1 scallion white, chopped
1 clove garlic
1 teaspoon white wine vinegar
1/4 teaspoon ground cumin
1/8 teaspoon ground coriander
Salt to taste
Thinly sliced scallion greens
Pulse peppers, oil, almonds, Manchego, scallion white,garlic, vinegar, cumin, and coriander in a food processor until smooth; season with salt. Transfer dip to a bowl; chill until ready to serve.
Garnish dip with scallion greens and serve with pita chips
makes 1 cup of dip
Our hostess had me get the peppers at Trader Joe's. The label says Hot and Sweet Cherry Peppers. I didn't look any other place. We dipped Prosciutto-wrapped Breadsticks instead of chips. I think you could find many uses for the dip. It was also suggested to put a cube of cheese into the peppers as a bite size treat! Very easy to make. Be sure to drain the peppers well.
