Leftover cornbread, coarsely crumbled or cubed (preferably a little dried out, but not crispy or toasted
chopped bell pepper
chopped hard-boiled egg, if desired
bacon, if desired, cooked and crumbled (I don't use)
Zesty Italian Dressing
Mix the cornbread and the other solid ingredients together in proportions you like.
Add some Ranch dressing, but not enough to make it soggy, remembering you will also add Zesty Italian to give it some zing (but still not soggy).
You want the salad coated, but not dripping wet.
After adding the dressings, taste and adjust it to your own liking.
Refrigerate until serving.
