1 cup chopped dates
3 teaspoons baking soda
2 cups boiling water
2 Tablespoons melted butter
2 cups sugar
2 teaspoons vanilla
2 eggs, unbeaten
4 cups flour
1 teaspoon salt
1/2 cups chopped nuts (I use pecans)
Preheat oven to 275 degrees.
With shortening, grease 6 (size #2) cans (the kind that peas and corn are packed in).
Mix chopped dates, baking soda and boiling water and allow to cool.
Add butter, sugar, vanilla, and mix in eggs one at a time.
Mix flour, salt and chopped nuts together in a separate bowl.
Add date mixture to flour mixture and mix together.
Fill each greased can half full of batter.
Bake in a slow oven for 1 1/4 to 1 1/2 hours.
Remove bread from cans while still warm.
