8 cups chopped apples (I use Northern Spy's)
2 cloves garlic, chopped
1 extra large sweet red pepper, chopped (or 2 medium)
1 pound golden raisins
1 pound black raisins
2 medium jalepeņos, chopped
2 Tablespoons mustard seeds
4 cups apple cider vinegar
2 medium onions, chopped
4 cups brown sugar
1/4 cup fresh ginger, chopped (no need to peel)
2 teaspoons salt
2 teaspoons ground allspice
2 teaspoons ground cinnamon
2 teaspoons ground cloves
Combine all in a large kettle and bring slowly to a boil, stirring often to keep from sticking.
Boil till thick.
Pour into hot jars, adjust lids and process in boiling water bath 10 minutes.
