Toasted Pumpkin Seeds
A tasty snack that is actually good for you...just save your own Pumpkin seeds and/or Squash seeds...they're FREE!
Make these sweet or savory!!!
2 cups pumpkin seeds or squash seeds
1 teaspoon salt OR
1 1/2 teaspoons cinnamon/sugar mixture
Scrape the seeds from the pumpkin or squash (acorn squash seeds are perfect for this).
Put the seeds in a collander and rinse away the strings.
Place the seeds between papertowels and pat dry.
Lightly oil a cookie sheet and spread the seeds out in a single layer.
Drizzle with a bit more oil and sprinkle with salt OR the cinnamon/sugar mixture.
Bake in a preheated oven at 350º F for up to 1 hour, stirring occasionally to be sure the seeds don't scorch.
Serve the toasted seeds as a stand-alone snack or sprinkle on salads. You'll find that the seeds become a major part of your enjoyment of pumpkin and squash!
