1 round loaf unsliced bread (it's great with sourdough, Italian, rye, pumpernickel, or whatever!)
12 slices crumbled bacon (I use low salt)
8 ounces Colby/Jack cheese, shredded
1 cup grated parmesan cheese
1 cup mayonnaise
minced onion (use as much as you like)
Cut center out of round bread leaving 1 inch thick shell.
Cut removed bread into bit-sized pieces.
Mix remaining ingredients in small bowl.
Spoon into hollowed bread shell.
Place on cookie sheet, or baking stone.
Bake at 350º F for 1 hour.
Serve with a loaf of bread cut up and/or crackers.
