Non-Alcoholic - Quick n' E-Z Horchata
This is a traditional Mexican drink, pronounced "or CHAH tah", also known as "Drink of the Gods”.
Ingredients:
2 cups evaporated milk
8 cups water
4 medium cinnamon sticks
1/4 cup rice flour (or 1/3 cup raw white rice crushed to a powder in a blender)
3/4 cup sugar
1 Tablespoon vanilla extract
Instructions:
In large saucepan add evaporated milk, water, cinnamon sticks.
Bring to boil.
Reduce to simmer, cook 5 minutes.
Remove from heat, let stand 15 minutes.
Remove cinnamon sticks and reserve.
Combine rice flour, sugar and vanilla in a bowl.
Pour in milk mixture, whisk to incorporate well.
Refrigerate at least 4 hours.
Pour into pitcher, discarding sediment.
Serve cold over ice with cinnamon sticks for stirrers.
