Oven-Baked Deepdish Apple Pancake

3 large eggs
1/2 cup milk
3/4 cup pancake mix, (or Bisquick)
1/3 cup sugar, (divided)
1 teaspoon ground cinnamon
3 large apples, peeled and sliced
1/4 cup pecans (or walnuts), chopped
Preheat oven to 450º F.
In a mixing bowl combine the eggs, milk, pancake mix, and 1 teaspoon of the sugar.
Combine well until it forms a smooth batter.
In a small bowl combine the remaining sugar and the cinnamon.
Spray a microwave safe, 2 to 3-inch deep, 9-inch, round glass pie plate with cooking spray.
Add all the sliced apples to the dish.
Cover with plastic wrap.
Cook in the microwave for 5 to 6 minutes, or until apples are tender.
When apples are done cooking, sprinkle nuts on top of apples.
Pour reserved batter over apples and nuts.
Sprinkle the top of the batter with the cinnamon and sugar mixture.
Cover the pie plate with foil and bake for 10 to 12 minutes until the pancake is set.
Serve hot with maple syrup or apple cinnamon syrup.
