Greek Salad Classic Dressing
For Greek Dressing (yields about 1 quart): Toggle Salad/Dressing by using Previous/Next selections above.
2/3 cup apple cider vinegar
1/3 cup fresh lemon juice
12 cloves fresh garlic, peeled
1 Tablespoon kosher salt (scant), or to taste
1 Tablespoon Dijon mustard
1 teaspoon ground oregano
1 teaspoon dried marjoram
1/2 teaspoon ground black pepper
2 1/2 cups canola oil
1 teaspoon crushed oregano
Prepare the dressing in a blender by combining first 8 ingredients; mix well.
While blender is running, slowly add the oil to create an emulsion.
Turn off blender and stir in the crushed oregano.
Set aside, or refrigerate until ready to use.
