Here is a recipe that I use that uses half brown sugar..last weekend I made a double and baked it in a 9 x 13 pan for the family get-together..it disappeared and dh wanted me to make another one just for us..so made two and baked one and put one in the freezer...our fav..apple pie
4 cups granny smith or tart apples, peeled and sliced
2 Tablespoons lemon juice
1 dash salt
1 1/2 teaspoons cinnamon
3/4 cup brown sugar
3/4 cup white sugar
1 dash nutmeg
3 Tablespoons flour
1/8 teaspoon cloves
1 teaspoon vanilla extract
Butter TO DOT FILLING
1 Tablespoon cornstarch
Peel apples and cut into slices.
Add the lemon juice and a dash of salt.
Set aside and mix in a large bowl the dry ingredients.
Add the apple slices and mix well to coat.
This mixture will be real runny (this is ok).
Dump into a 9" or larger unbaked pie shell.
Sprinkle with vanilla and dot with butter.
Top with top crust with good slits in it.
Set on a sheet to catch the drips and bake for 15 minutes at 400º F then reduce heat to 350º F and bake for 50 minutes or until a knife inserted into a split confirms that the apples are tender.
