2 pounds parsnips, trimmed, peeled and cut into 2 inch long and 1/2 inch wide sticks
2 medium onions, halved and sliced
1/4 cup balsamic vinegar
1/4 cup light brown sugar
1/2 teaspoon salt, or more, to taste
1/2 teaspoon pepper, or more, to taste
Put oven rack in lower 2/3 of oven.
Heat oven to 450ºF.
Line baking sheet with foil.
In large bowl, combine parsnips, onions, oil, vinegar and brown sugar.
Transfer to baking sheet.
Season with salt and pepper.
Cover with foil.
Roast for 20-25 minutes or until tender.
Uncover baking sheet and continue roasting until parsnips are well-browned and glazed, 5 - 10 minutes longer, stirring once.
