Eggplant Pizza ala Siciliana
Quality ingredients make this 'Veggie' Pizza a Gourmet delight. This would make Don Vito Corleone proud!
1 small eggplant, cut into thin rounds
2 Tablespoons olive oil
dough for 2 pizzas, your own recipe or frozen
tomato/pizza sauce for 2 pizzas
6 ounces mozzarella cheese, sliced
1/2 cup pitted black olives
1 Tablespoon capers, capers
1/4 cup Pecorino cheese, grated
salt and freshly ground black pepper
Preheat oven to 400º F. Brush eggplant rounds with olive oil and arrange on baking sheet.
Bake for 10-15 minutes, turning once until browned and tender.
Remove and drain on paper towels.
Increase oven temperature to 425º F.
Roll out pizza dough into two 10" rounds.
Transfer dough to baking sheets or stone and spread with tomato sauce.
Pile eggplant slices on top of sauce and cover with mozzarella.
Dot with olives and capers.
Sprinkle Pecorino cheese
liberally over top.
Season with plenty of salt and pepper.
Bake for 15-20 minutes until crust on pizza is golden brown.
