Pastel Bonbons
Decadent or playful...you can be truly wicked with these!
Ingredients:
1 package (3 ounces) cream cheese
2 1/2 cups powdered sugar
1/4 teaspoon vanilla extract
Dash salt (less than 1/4 teaspoon)
1 drop food color
1/3 to 1/2 cup flaked coconut
Instructions:
In medium bowl, with wooden spoon, beat cream cheese until smooth.
Gradually beat in powdered sugar, blending thoroughly.
Beat in vanilla and salt.
Add just enough food color to tint a delicate color.
Refrigerate, covered 1 hour.
Then shape into balls, using a rounded teaspoon of mixture for each.
Roll in coconut; flatten top slightly.
Place on cookie sheet covered with waxed paper; refrigerate several hours, or until firm.
Makes about 20.

Oz's kids made little Yeti out of these by using some colored 'sprinkles' for eyes. They tinted the coconut green to make little Santa's Helpers. Play all you want, they will ALL get eaten!
