Creamy Tomato-Basil Sauce
Originally posted as the sauce for AKBettie's Artichoke Timbales it looked too good to leave it hidden. So here it is as a stand-alone sauce. Enjoy!
3 Tablespoon olive oil
1/2 cup finely chopped shallots (can substitute green onions or regular onions)
1 can diced tomatoes
1 cup chicken broth (or leftover broth from making Artichoke Timbales)
1/4 teaspoon black pepper
pinch of sugar
1/2 cup whipping cream
2 Tablespoons chopped fresh basil
salt to taste
Heat oil in heavy skillet and saute shallots.
Mix in tomatoes, broth, pepper and sugar.
Simmer about 20 minutes, stirring occasionally.
Puree tomatoe mixture until smooth.
Pour into sauce pan and add cream and cook until slightly thickened.
Mix in basil and salt to taste.
