Chocolate brownies with a mint filling. Very rich so cut in small squares.
3 squares baker's chocolate
2/3 cup oil
2 cups brown sugar
3 large eggs
1 1/4 cup flour
1/2 teaspoon baking powder
1 teaspoon vanilla extract
1/4 teaspoon salt
For the mint filling:
4 cups powdered sugar
1 cup soft butter
1/4 cup creme de menthe
1/2 teaspoon green food coloring
1 cup chocolate chips
3 Tablespoons butter
Melt the chocolate squares over low heat.
Remove from heat and add oil, brown sugar, eggs, flour, baking powder, vanilla and salt into the melted chocolate.
Mix till blended.
Spread into a 10 x 15 inch pan.
Bake at 350° F for 18 minutes.
Make the mint filling:
Combine first four ingredients until totally mixed.
Spread on brownies.
After mint filling is set a bit.
Melt the chocolate chips and butter.
Spread over the mint filling.
Chill them a bit before cutting into squares.
