Kidney Bean Salad
Not a bean fan myself, but I can't get enough of this salad!
1 (15 1/2 ounce) can kidney beans, drained
1/2 cup diced celery
1/3 cup chopped onion
1 (2 ounce) jar diced pimento or 1/4 cup chopped red bell pepper
1 to 1 1/2 Tablespoons sugar (start with 1, add more later if you wish)
pinch garlic powder
1 Tablespoon sweet pickle relish
1/4 cup mayonnaise (not Miracle Whip)
In a suitable bowl, stir together the kidney beans, celery, onion and pimento or red bell pepper.
Mix the remaining ingredients well and pour over the bean mixture.
Cover and refrigerate a few hours before serving.
May add a chopped, hard-boiled egg if desired.
