One of my coworkers made this for our breakfast Christmas party at work Monday and she was inundated with requests for the recipe. It is YUMMY!! Thought I would share it with all of you...
1 pound mild sausage
12 large eggs
2 Tablespoons margarine, melted
2 Tablespoons flour
1/2 teaspoon pepper
1 1/2 cups milk
8 ounces Velveeta, cut up
4 Tablespoons margarine
2 1/2 cups soft bread crumbs (4-6 slices)
1/8 teaspoon paprika
Brown and drain sausage.
Scramble all twelve eggs.
Put into casserole dish.
For Cheese Sauce:
Combine melted margarine with flour and pepper in a saucepan.
Add milk and cook until bubbly.
Stir in the Velveeta until melted.
Pour cheese mixture over egg mixture.
For Crumb Topping:
Melt margarine and pour over bread crumbs.
Sprinkle over egg mixture.
Sprinkle paprika over top.
Bake uncovered at 350º F for 30 minutes.
Let stand 10 minutes before serving.
