Connie's Pumpkin Butter
Rubydoo, Since I've never made pumpkin butter, I went searching for an award winning recipe. This was said to have won the blue ribbon at the Texas State Fair in 1996 and has been published in the State Fair Cookbook! Constance generously shared her recipe, now that it has been retired from competition.
Ingredients:
2 cans (15-16 ounce cans) pumpkin
1 tablespoon Pumpkin Pie Spice
1 box of Sure-Jell
4 1/2 cups sugar
Instructions:
Combine pumpkin, spice and Sure-Jell thoroughly in large microwavable dish.
Cook covered for 5 minutes.
Stir well, cook additional 5 minutes.
Remove from microwave and stir in sugar until thoroughly mixed in, it will become runny.
Cook covered for 5 minutes, stir well, cover and cook for 6 minutes.
In the meantime, have jars prepped and ready, the canner heated to boiling.
Spoon mixture into jars and process for 10 minutes.
