Dried Beet Chips
Makes about 1/2 cup.
3 cups water
3 cups sugar
1 raw beet, thinly sliced crosswise
Combine water and sugar in stock pot.
Bring to rapid boil and add sliced beet.
Cook until tender.
Drain liquid and pat dry beet slices.
Place beet slices flat on a sheet pan.
Top with whole anise seeds and kosher salt.
Bake in a preheated 350º F oven for about 10 minutes, or until crispy.
Remove chips from sheet pan while still hot or they will break.
