Ground Beef Vegetable Medley
This is a hot dish that my mom use to make and I make it for potlucks. My kids liked it even when they were little. I will note my changes at the bottom. Very quick and easy.
Serves 4 to 5.
3/4 to 1 pound ground beef, browned
1 small onion, chopped
green pepper, chopped (if you have some)
1/4 cup flour
1 can whole kernel corn (I use Nibblets)
1 pint tomatoes
1 Tablespoon butter, melted
2 slices of bread, cubed then rolled in melted butter
Brown meat (in fat if needed) then add chopped onion and pepper, blend in flour and add corn and tomatoes.
Cover with buttered bread cubes.
Bake uncovered for 1/2 hour at 350º F in at least a 1 1/2 qt baking dish.

That is how my mother gave it to me.
My kids didn't like onions or lumps of tomatoes so I use an 8 oz can of tomato sauce instead of the diced tomatoes and often skip the onions and peppers. I use a little salt and pepper too, but sometimes forget and I am the only one who misses it. Quick and easy to make for supper and great for potlucks. Serve with a salad and some bread. I also sometimes add a little garlic salt or powder to the melted butter
