Just had one of these for dinner.. Very satisfying and filling. And, you can adapt it to add anything you like. We did not have Yumm Sauce, so I used some Chipotle I purchased from the market.
3 cups cooked Brown rice
1 can black beans (drained)
Yumm Sauce or other chipotle sauce or garlic based sauce (as much as you like) I use 1 Tablespoon per serving
2 Tablespoons olive oil
2 medium green onion (scallions), sliced
1/2 cup black olives, chopped
cheddar cheese/ or monterey/ cheddar mix
Cook brown rice as directed.
In a large skillet add olive oil, green onion and rice.
Stir till heated through.
Add black beans.
When heated through divide into bowls and top with 1 Tablespoon of chipolte or Yumm sauce.
Add other ingredients layering as you would to a taco, until all are used top with avocado.
This may also be served in a tortilla wrap.
