1/2 cup olive oil
1 1/2 cup water, divided
1 Tablespoon minced garlic (about 3 cloves)
1 Tablespoon dried oregano
1 Tablespoon lemon juice
8 to 10 medium potatoes
Preheat oven to 440ºF.
Meanwhile, in a cookie sheet with sides put the olive oil, 1 cup water, the minced garlic, dried oregano and lemon juice.
Stir to blend.
Peel the potatoes.
Cut them in half lengthwise, and then each half cut into 3 or 4 wedges.
Add the potatoes to the cookie sheet.
Sprinkle generously with salt and pepper.
With clean hands mix well.
Bake for 40 minutes.
Turn over the potatoes.
Lightly salt and pepper the bottoms if desired.
Add final 1/2 cup water and bake 40 more minutes.
These were very good and easy to make.
