Mexican Fudge (Cheese Squares)
Cheesy appetizer squares, a local favorite at parties.
1/2 pound Monterey Jack cheese, shredded
1/2 pound Colby cheese, shredded
6 large eggs, beaten
1 small can (4 oz.)chopped chili peppers, drained
Spray 8 x 8 pan with vegetable spray (Pam).
Layer peppers in bottom.
Top evenly with cheeses and pour beaten eggs over.
Bake at 250º F 45 minutes or until set in the middle.
Let cool and cut into squares.
Serve warm, cold, or at room temperature.

I use a pound of the already shredded Colby/Jack cheese for convenience.
Follow the recipe exactly for the faint at heart. I like a little more heat, so I chop and use San Marcos Mild canned jalapeno peppers (they are halved without seeds and very mild jalapenos), a bit more kick than canned chili peppers. You may add Tabasco to the beaten eggs if you like more heat.
These will turn out exactly right in the oven if you use an 8x8" disposable aluminum pan. If you cook them in a regular pan or a glass dish, you may have to bake them longer for the mixture to set up.
