Cranberry No-Bake Cheesecake
I have always liked these No-Bake Cheesecakes, even plain...but the addition of the Whole Berry Cranberry Sauce was a stroke of genius...even if I do say so myself!
1 graham cracker pie shell
8 ounces cream cheese, softened
1 (14 ounce) can sweetened condensed milk
juice of 1 lemon
1 cup whole berry cranberry sauce
1 Tablespoon orange zest, finely grated
Prepare pie shell for the cheesecake, baking if necessary...then cool.
Blend the cream cheese, sweetened condensed milk and lemon juice until completely homogenized.
Mix in the cranberry sauce and orange zest.
Pour into the pie shell and refrigerate for at least 2 hours.
Pour any excess into a pudding cup with a couple of vanilla wafers.
When I first made this I used the entire can of cranberry sauce and although it had excellent flavor, the pie didn't set up as firmly as I might have wished. So if this is for the family, go ahead and use the entire can...do the half can version for company!
