Easy and Healthy Broccoli Soup, makes 4 servings.
1 Tablespoon Butter
1 medium Onion, diced
1 bunch broccoli*
4 cups Chicken broth
* You can substitute frozen broccoli for the fresh broccoli.
Melt the butter in a soup pot.
Add the onion and cook until just soft.
Cut the broccoli into small pieces.
Add the broccoli and broth to the pan.
Bring to a boil.
Reduce the heat and simmer for 30 minutes (or until the broccoli is very soft).
If desired, add in 1/2 cup shredded cheese.
Allow cooling slightly.
Carefully add the mixture to a blender or food processor (in small batches) and puree until smooth.
Return to the pan.
You can substitute cauliflower for the broccoli...in which case you would no longer have broccoli soup but rather cauliflower soup!
