Turkey & Wild Rice Soup
This is the soup that you 'make' leftovers for!
30 ounces chicken broth (3-3/4 cups)
2 cups water
1/2 cup chopped green onions
1 box Uncle Ben's Original Long Grain & Wild Rice mix
1/2 cup (1 stick) margarine
1/2 cup flour
1/2 teaspoon poultry seasoning
1/4 teaspoon pepper
2 cups milk
1-1/2 cups cubed cooked turkey (or chicken)
8 strips bacon, fried crisp and crumbled
In a Dutch oven or large pot, bring broth and water to a boil.
Add green onions and rice mix along with seasoning packet.
Simmer 20-30 minutes.
In a medium saucepan, melt margarine; stir in flour, poultry seasoning and pepper.
Gradually add milk, stirring constantly until mixture thickens.
Add to broth mixture.
Stir in chicken and bacon and heat through.
Do not boil.
